Santo 2018 Assyrtiko Santorini
This may be a Greek wine, but it's not a geek wine - we would recommend this gorgeous white to everyone. Assyrtiko is indigenous to Santorini, and maintains its delightful characteristics even through the punishing, hot conditions of the arid island. As illustrated on the label, the vines are woven into a wreath shape, a technique used to help protect against winds and conserve water. This beauty is bone-dry and acidic, yet has a bit of texture, maybe due to the 4 or so hours it spends on the skins. There are notes of citrus, pineapple, honeysuckle, sea-breeze freshness and mineral smokiness typical of volcanic soils. Pair this with a lime-y ceviche, sheep's milk cheese and green olives, gazpacho, and sardines.
