53% Dolcetto, 44% Barbera, and 3% Nebbiolo
Winemaker Sam Bilbro knows what the heck he’s doing with Italian varietals. His focus is on the grapes of Piedmont, and he sources them from incredible vineyards throughout Mendocino County. This blend of Dolcetto, Barbera and Nebbiolo initially went through carbonic maceration* which lends a bit of freshness to the wine, later switching to standard fermentation which ushers in more of the bass notes.
Lush with dark cherry, violet and graphite on the nose, the palate is joyously bright and full with more cherry, blueberry, fresh earth, and iron. Each swig is at once fresh and approachable, yet deep and generous with incredible backbone and texture - a perfect food wine! Pairs well with June Gloom, cheese and charcuterie, wild salmon carpaccio, spaghetti marinara or bolognese.
